Before purchasing, please review the following handling requirements:
- Cleaning Veins & Membrane Prep: Cleaning and preparing the liver requires patience. You must carefully strip away the thin outer skin, remove blood vessels, and soak the liver in cold salted water or sake to draw out residual blood and achieve a smooth, creamy texture.
- Natural Marine Life (Nematodes): Like many wild-caught ground fish species (including cod, haddock, flounder, etc) monkfish naturally host harmless marine parasites known as nematodes (anisakis worms). Finding these while cleaning the monkfish is completely normal and expected. Removing them is a mandatory step in the cleaning process. You will need to carefully peel back the outer membrane and use fine tweezers or a paring knife to gently lift and purge any visible nematodes from the flesh.
