These conveniently pre-cut, ready-to-use blocks (Saku is the Japanese term for a uniform rectangular block) are super-frozen immediately after processing to lock in peak freshness, ensuring a firm, beautiful texture perfect for slicing.

Escolar is one of the fattiest fish available, containing high levels of indigestible wax esters (gempylotoxin). This fat content gives the fish its famously rich, silky, and "buttery" texture that is unlike any other white fish. This decadent quality makes it a highly desired delicacy.

Due to its high concentration of indigestible wax esters, Escolar must be consumed in moderation. While not toxic, consuming more than a recommended portion (typically under 6 ounces) may cause temporary gastrointestinal discomfort (keriorrhea) in some individuals. We recommend enjoying it in small portions, just as you would any very rich, indulgent food.

Frozen items are shipped with dry ice to ensure the arrive fully frozen. Please place them directly into your freezer upon arrival.

If you order fresh and frozen items together, we package your shipment using gel ice packs instead of dry ice to protect your fresh goods. As a result, frozen items may partially thaw during transit. You can safely place them straight back into your freezer, or allow them to finish defrosting and enjoy right away.

Defrosting Guidelines

  1. Overnight in the Fridge: Small packs take 6–12 hours; large packs take 12–48 hours.
  2. Cold Water Bowl: Submerge sealed items in cold water for a faster thaw.
  • Note: Do not use hot water or attempt to thaw by cooking, as this ruins the natural texture and flavor.
