Whole North Atlantic Pollock is a robust, flavorful alternative to Atlantic Cod. While its Pacific cousin is typically used for mild fish sticks, the North Atlantic variety is a chef’s favorite for its richer flavor, larger flake, and heartier texture.

Unlike the smaller Alaska Pollock, the North Atlantic species is a powerful swimmer with a slightly higher oil content. This results in a more "savory" and characteristic seafood flavor. When cooked whole, the meat remains incredibly succulent, and the dark, silver-grey skin crisps up beautifully, providing a stunning contrast to the snow-white meat beneath.
