También conocidos como "Kama", estos suculentos cortes provienen del cogote del hamachi y son famosos por su rico sabor y su textura tierna y escamosa. A diferencia de los cortes más magros del hamachi, el cogote tiene un mayor contenido de grasa, lo que lo hace excepcionalmente jugoso y sabroso.
Los cuellos de hamachi se suelen asar a la parrilla o al horno hasta quedar perfectamente crujientes. El calor intenso derrite la grasa, creando un exterior bellamente caramelizado, manteniendo el interior jugoso y delicado. Un simple condimento de sal suele ser suficiente para realzar su dulzor natural, aunque un chorrito de salsa de soja y un chorrito de limón o lima pueden realzar la experiencia. These methods are ideal for capitalizing on the collar's rich fat content, resulting in tender meat and crispy skin:
- Grilled: Season simply with salt and pepper, brush with oil, and grill over medium-high heat until the skin is charred and crispy.
- Broiled (Sake Kama): Marinate lightly in soy sauce, mirin, and ginger. Broil on high heat until the meat is flaky and the edges are caramelized. This is the traditional "Sake Kama" style!
- Air Fryer: A quick and easy way to achieve maximum crispiness on the skin and edges with a moist interior.
- Roasted/Baked: Place on a sheet pan with citrus slices and herbs, and roast at high heat (around 400°F/200°C) until cooked through.
- Deep Fried: For a truly indulgent treat, the high-fat content makes the collar excellent for deep frying until golden brown and extremely crispy.
Frozen items are shipped with dry ice to ensure the arrive fully frozen. Please place them directly into your freezer upon arrival.
If you order fresh and frozen items together, we package your shipment using gel ice packs instead of dry ice to protect your fresh goods. As a result, frozen items may partially thaw during transit. You can safely place them straight back into your freezer, or allow them to finish defrosting and enjoy right away.
Defrosting Guidelines
- Overnight in the Fridge: Small packs take 6–12 hours; large packs take 12–48 hours.
- Cold Water Bowl: Submerge sealed items in cold water for a faster thaw.
- Note: Do not use hot water or attempt to thaw by cooking, as this ruins the natural texture and flavor.
