If you order fresh and frozen items together, we package your shipment using gel ice packs instead of dry ice to protect your fresh goods. As a result, frozen items may partially thaw during transit. You can safely place them straight back into your freezer, or allow them to finish defrosting and enjoy right away.

Defrosting Guidelines

  1. Overnight in the Fridge: Small packs take 6–12 hours; large packs take 12–48 hours.
  2. Cold Water Bowl: Submerge sealed items in cold water for a faster thaw.
  • Note: Do not use hot water or attempt to thaw by cooking, as this ruins the natural texture and flavor.

I'm an amateur home sushi chef who's been working on replicating Edomae-style preparations for a while now, and I've had the chance to eat at (and observe chefs at) a number of well-regarded sushi restaurants across Seattle (e.g. Sushi Kashiba), Boston (e.g. No Relation, O Ya, Boston 311), and Tokyo (Sukiyabashi Jiro featured in Jiro Dreams of Sushi) — so I don't say this lightly: this ankimo is genuinely impressive at its price point.

My usual benchmark is the Azuma Foods-style steamed monkfish liver, 7.77 oz (220g), which is very good but comes at a real price premium and can be a hassle to track down. Side by side, Intershell's ankimo holds its own — smooth, clean-tasting, well-balanced richness without any off notes. If I'm being honest and splitting hairs, the Azuma product might have a very slight edge in taste and texture refinement, but it's close enough that I wouldn't blame anyone for not noticing the difference.

Given how hard ankimo is to source at all as a home cook, and how expensive it is when you do find it on a restaurant tasting menu, this is genuinely a steal at this price. Easy recommend.
