Both Atlantic pollock and haddock share North Atlantic waters and belong to the groundfish family, but their physical characteristics, flavor nuances, and price points set them apart:
Flavor: Atlantic Pollock is savory and slightly richer; Haddock is lighter, sweeter, and more delicate.
Texture: Atlantic Pollock is firm and meaty; Haddock has a softer, chunkier, more tender flake. Pollock has a little bit of a higher fat content, whereas haddock is leaner.
Raw Appearance: Atlantic Pollock has a natural greyish-pink tint that cooks to off-white; Haddock is bright white raw. Both of them cooked are white and look almost identical.

- Cold Water Bowl: Submerge sealed items in cold water for a faster thaw.
- Note: Do not use hot water or attempt to thaw by cooking, as this ruins the natural texture and flavor.
