Skate wings stand apart from traditional round fish and flatfish due to their unique cartilaginous skeleton, fan-like muscle fibers, and sweet flavor profile.

Compared to Flounder: Skate offers a similar delicate sweetness, but its longer muscle fibers hold together much better during pan-searing.

Compared to Cod: Skate lacks traditional "flakes"; instead, the meat separates into tender, succulent ribbons.

Compared to Monkfish: Both feature cartilage instead of pin bones, but skate wings cook much faster and have a lighter, airier texture.

Classic Skate Wing Meunière (Brown Butter & Capers): Dust the wing or fillet lightly in flour, pan-sear in butter until golden, and finish with a rich sauce of browned butter (beurre noisette), lemon juice, fresh parsley, and briny capers. The acid cuts through the richness of the fish perfectly.

Pan-Seared Skate with Warm Tomato & Olive Tapenade: A Mediterranean variation. Crisp the skate in olive oil and top it with a pan sauce of blistered cherry tomatoes, kalamata olives, garlic, white wine, and fresh basil for a vibrant, summer-style dish.

If you order fresh and frozen items together, we package your shipment using gel ice packs instead of dry ice to protect your fresh goods. As a result, frozen items may partially thaw during transit. You can safely place them straight back into your freezer, or allow them to finish defrosting and enjoy right away.

Defrosting Guidelines

1. Overnight in the Fridge: Small packs take 6–12 hours; large packs take 12–48 hours.
2. Cold Water Bowl: Submerge sealed items in cold water for a faster thaw.
