PEI mussels are the "gold standard" for consistency. Because they are raised on suspended ropes, their environment is carefully controlled to produce a uniform product.
- Consistency: Chefs rely on these because every mussel in a 10lb bag will be roughly the same size. This ensures that every shell opens at the same time, preventing a mix of overcooked and undercooked meats.
- The "Clean" Factor: These are famous for being 100% grit-free. Since they never touch the seabed, there is no sand to purge. They also arrive pre-cleaned, saving you the labor of scrubbing shells.
- Flavor Profile: They offer a sweet, mild, and delicate flavor. While some seafood purists find them less "bold" than wild varieties, their clean taste makes them an incredible canvas for complex sauces like Thai curry or garlic and white wine.

Store immediately in the coldest part of your refrigerator. Do not put live shellfish in your freezer. Keep shellfish in an open-top container or bowl, never store them in sealed plastic bags or airtight containers, as live shellfish require oxygen. Never store live shellfish in standing tap water or ice water.
Shells should be closed, unless they are Live Scallops, Steamers, Razors, or Live Surf Clams as the shells naturally stay open and never fully close due to its anatomy. If any are open, give them a gentle tap and check for movement, if they don't pull shut, discard them.
