When we harvest a magnificent, giant Bluefin Tuna, the massive collars are always the talk of the cutting room. These incredible pieces can weigh up to 20 pounds a piece! While most people rush for the loin steaks, true seafood connoisseurs and our master cutters know that the collar hides the absolute most flavorful, rich, and decadent meat on the entire fish.

Because a 20-pound collar is a bit much for the home kitchen, we’ve portioned them into perfectly sized, manageable Collar Chunks—giving you access to a premium delicacy usually reserved for high-end izakayas and sushi chefs.

Think of the Bluefin collar as the "wagyu" of the sea, or the ocean's equivalent to a rich pork shank. How to Cook Tuna Collars

Don't let the bones intimidate you—they are actually your secret weapon. Cooking meat on the bone locks in juices and deepens the flavor profile.

Our favorite way to prepare it is ridiculously simple:

  1. Season: Pat the chunk dry, rub with a little oil, and season generously with sea salt (or a brush of soy glaze/teriyaki).
  2. Roast: Bake it in a hot oven (or pop it under the broiler).
