To ensure the best taste and texture, thaw your 5lb block slowly. Never thaw at room temperature.
Method 1: The Best Method (Slow Refrigerator Thaw)
This method requires planning but yields the best results, minimizing water absorption and texture loss.
- Preparation: Remove the frozen block from its cardboard box and place it, still in its plastic liner (if applicable), into a deep bowl or pan.
- Thaw Time: Place the bowl/pan in the refrigerator
- Duration: Allow 12 to 24 hours for the entire 5lb block to thaw completely, depending on your refrigerator temperature.
- Drain: Once fully thawed, drain off any excess water and prepare the shrimp immediately.
Method 2: The Quickest Method (Cold Water Thaw)
Use this method if you need the shrimp ready in a few hours.
- Preparation: Keep the frozen shrimp block inside its original plastic packaging to prevent direct contact with water. If the plastic is broken, place the block inside a large, sealed plastic bag.
- Submerge: Place the sealed block into a large bowl filled with cold water. Make sure the block is completely submerged.
- Duration: This process should take 2.5 hours or more for a 5lb block.
- Check: Gently squeeze the block to ensure all pieces have separated and are fully thawed.
- Use Immediately: Drain the shrimp well and cook immediately. Do not refreeze.
The freezing method significantly impacts how the shrimp is handled, thawed, and used. Your Block Shrimp and IQF (Individually Quick Frozen) Shrimp are frozen differently, appealing to different needs:
Block Frozen Shrimp
- Freezing: Shrimp are packed tightly and frozen into a single, solid block (the 5lb brick).
- Thawing/Use: You must thaw the entire block before separating and using the shrimp.
- Quality Preservation: The dense block and surrounding ice glaze provide superior protection against freezer burn, preserving the shrimp's texture and wild-caught flavor—this is why Gloucester locals love it.
- Best For: Large quantity use, such as massive holiday platters or catering events.
IQF (Individually Quick Frozen) Shrimp
- Freezing: Each individual shrimp is rapidly frozen separately before being bagged.
- Thawing/Use: The pieces are loose and separate, allowing you to pour out only the exact number you need without thawing the rest of the bag.
- Quality Preservation: Provides excellent quality preservation, but loose pieces can be slightly more susceptible to dehydration/freezer burn over time compared to the block.
- Best For: Quick meals, small servings, or when precise portion control is needed (e.g., adding a few to a stir-fry).
The specific brand shown in product photos is not guaranteed. We source our premium block shrimp based strictly on size, type, quality, and country of origin. Consequently, the brand and appearance of the packaging may vary based on market availability.
Frozen items are shipped with dry ice to ensure the arrive fully frozen. Please place them directly into your freezer upon arrival.
If you order fresh and frozen items together, we package your shipment using gel ice packs instead of dry ice to protect your fresh goods. As a result, frozen items may partially thaw during transit. You can safely place them straight back into your freezer, or allow them to finish defrosting and enjoy right away.
Defrosting Guidelines
- Overnight in the Fridge: Small packs take 6–12 hours; large packs take 12–48 hours.
- Cold Water Bowl: Submerge sealed items in cold water for a faster thaw.
- Note: Do not use hot water or attempt to thaw by cooking, as this ruins the natural texture and flavor.
