Pack Size: 1 Lb

- Package Size: 1 Lb
- Form: Frozen, cube cuts
- Harvest Area: Aysén, Chile
- Scientific Name: Salmo salar
- Origin & Quality: The Aysen brand is renowned for its commitment to high standards. Grown in the pristine marine environment of the South Pacific, Aysen Coho is a robust fish known for its intense, unique red-orange color, similar to wild sockeye. This vibrancy is naturally present in the fish, giving your poke a beautiful, striking appearance.
- Superior Taste: This Coho variety is favored for its mild, less "fishy" flavor and excellent fat content, providing a rich, buttery mouthfeel that melts in your mouth—ideal characteristics for a delicate dish like poke.
- Sashimi-Grade Assurance: To guarantee the highest level of safety and quality for raw consumption, Aysen Coho is processed in isolated, bio-secure environments and flash-frozen within eight hours of harvest. This rapid-freeze process locks in peak freshness, superior texture, and nutritional value, making it a safer and, some would argue, fresher choice than traditional "fresh" salmon that has traveled unfrozen for days.
- Responsible Sourcing: Aysen Coho is a more sustainable choice, grown in half the time of other salmon species. Its natural resistance to certain diseases often allows for farming with minimal or no antibiotic treatments, and the company holds key certifications like ASC and BAP, reflecting its dedication to environmentally responsible practices
Frozen items are shipped with dry ice to ensure the arrive fully frozen. Please place them directly into your freezer upon arrival.
If you order fresh and frozen items together, we package your shipment using gel ice packs instead of dry ice to protect your fresh goods. As a result, frozen items may partially thaw during transit. You can safely place them straight back into your freezer, or allow them to finish defrosting and enjoy right away.
Defrosting Guidelines
- Overnight in the Fridge: Small packs take 6–12 hours; large packs take 12–48 hours.
- Cold Water Bowl: Submerge sealed items in cold water for a faster thaw.
- Note: Do not use hot water or attempt to thaw by cooking, as this ruins the natural texture and flavor.
