Ocean perch, also known as Redfish, refers to Sebastes marinus (golden redfish) and Sebastes fasciatus (Acadian redfish). Harvested from the cold, deep waters of the North Atlantic, these slow-growing deepwater fish feature a striking orange-red skin and vibrant white meat. Despite sharing the name "redfish" with Southern drum species, Atlantic ocean perch is a distinct ocean rockfish prized for its clean, pure flavor profile.

Because both species share a reddish skin and mild flavor, consumers and restaurant-goers frequently confuse them. However, they are entirely different fish with distinct origins, textures, and culinary characteristics.

  • Redfish (Ocean Perch): A deepwater Atlantic rockfish (Sebastes marinus or Sebastes fasciatus) harvested from the cold, icy waters of the North Atlantic. (Note: In the Gulf of Mexico, "Redfish" can also refer to Red Drum, another separate species). The flavor profile is very mild, subtle, and lightly sweet with a clean, low-oil taste. Highly accessible and budget-friendly, making it an ideal choice for everyday family meals, tacos, and frying.
  • Red Snapper: A warm-water snapper species (Lutjanus campechanus) native to the Gulf of Mexico and the southern Atlantic coast.   2. Cold Water Bowl: Submerge sealed items in cold water for a faster thaw.
  • Note: Do not use hot water or attempt to thaw by cooking, as this ruins the natural texture and flavor.
