Fire up the grill and get ready for a true seafood masterpiece. Our Jumbo Bone-In White Fish Steaks—expertly cut from the freshest white fish (Pollock)—are a massive favorite among seafood lovers, and for good reason. They are thick, meaty, incredibly delicious, and built to handle the heat.

You are guaranteed a mild, slightly sweet flavor and a beautiful, flaky texture that absorbs marinades and seasonings like a charm.

Leaving the bone in isn't just traditional; it’s a culinary secret. The bone conducts heat evenly during cooking and locks in the fish's natural juices. This ensures your steaks stay incredibly moist, tender, and bursting with clean, ocean-fresh flavor, rather than drying out.

Unlike thin fillets, fish steaks (cross-sections of thick fish like swordfish, tuna, salmon, or halibut containing the central bone) handle intense heat well and hold up to bold seasonings.

Cast-Iron Pan Searing: Pat the steak completely dry, season generously with salt and pepper, and sear in a smoking-hot skillet with high-smoke-point oil for 3–4 minutes per side. Baste with butter, garlic, and thyme during the final minute for a golden crust.

High-Heat Grilling: Brush the steak with oil and grill over direct medium-high heat (400–450°F) for 4–5 minutes per side. Leave the steak undisturbed to form clear grill marks and prevent sticking.

Frozen items are shipped with dry ice to ensure the arrive fully frozen. Please place them directly into your freezer upon arrival.

If you order fresh and frozen items together, we package your shipment using gel ice packs instead of dry ice to protect your fresh goods. As a result, frozen items may partially thaw during transit. You can safely place them straight back into your freezer, or allow them to finish defrosting and enjoy right away.

Defrosting Guidelines

  1. Overnight in the Fridge: Small packs take 6–12 hours; large packs take 12–48 hours.
  2. Cold Water Bowl: Submerge sealed items in cold water for a faster thaw.
  • Note: Do not use hot water or attempt to thaw by cooking, as this ruins the natural texture and flavor.
