These are special and having them delivered fresh is a bonus. The rest is up to me - sautéed and then removed to sauté finely chopped shallots in their juices and then adding heavy cream, a dash of Dijon and or tomato paste, fresh coarse ground pepper - perhaps some cardamom or dash of clove - and then return the scallops with released liquid and squeeze juice of half a lemon. I just may have talked myself into reordering another 2 pounds. First pound prepared same day or next and the other in the freezer for later. Really appreciate you guys making this not easy to find delicacy available.
