Discover the secret to perfectly fried scallops at home with Intershell's scallop meat. Our scallops are harvested from the cold, pristine waters off the coasts of the Gulf of Maine and Cape Cod by our dedicated boats, then brought directly to our Gloucester wharf.

Each scallop is hand-shucked, carefully selected for its ideal size for frying, and immediately flash-frozen to lock in its fresh, natural flavor. We are proud to offer a 100% natural product, free from the chemical treatments—like sodium tripolyphosphate—that are often used by other companies. You can trust that our scallops contain only what nature intended, ensuring a wholesome and delicious meal every time.

Intershell's fresh scallops come from any one of the 3 boats:

  • F/V Hotate: Named after the Japanese word for "scallop," this vessel is a specialized in catching scallops.
  • F/V Rose Bing: Named after owner Monte Rome’s daughter, this boat is a symbol of the family-run nature of the business and its Gloucester roots.
  • F/V Wyandot: Named in honor of the Wyandot tribe and Wyandot County, Ohio, where the owner Monte Rome is from.

Frozen items are shipped with dry ice to ensure the arrive fully frozen. Please place them directly into your freezer upon arrival.

If you order fresh and frozen items together, we package your shipment using gel ice packs instead of dry ice to protect your fresh goods. As a result, frozen items may partially thaw during transit. You can safely place them straight back into your freezer, or allow them to finish defrosting and enjoy right away.

Defrosting Guidelines

  1. Overnight in the Fridge: Small packs take 6–12 hours; large packs take 12–48 hours.
  2. Cold Water Bowl: Submerge sealed items in cold water for a faster thaw.
  • Note: Do not use hot water or attempt to thaw by cooking, as this ruins the natural texture and flavor.
