Fresh, raw monkfish liver is a prized culinary delicacy, and preparing it at home is a rewarding experience. However, raw monkfish liver is a specialized ingredient that requires proper knowledge, care, and attention to prep correctly.

Before purchasing, please review the following handling requirements:

  • Cleaning Veins & Membrane Prep: Cleaning and preparing the liver requires patience. You must carefully strip away the thin outer skin, remove blood vessels, and soak the liver in cold salted water or sake to draw out residual blood and achieve a smooth, creamy texture.
  • Natural Marine Life (Nematodes): Like many wild-caught ground fish species (including cod, haddock, flounder, etc) monkfish naturally host harmless marine parasites known as nematodes (anisakis worms). Finding these while cleaning the monkfish is completely normal and expected. Removing them is a mandatory step in the cleaning process. You will need to carefully peel back the outer membrane and use fine tweezers or a paring knife to gently lift and purge any visible nematodes from the flesh.
  • Thorough Cooking: Fresh monkfish liver should never be consumed raw. It must be cured, rolled, and fully cooked (typically steamed or poached to an internal temperature of at least 145°F / 63°C) to ensure it is completely safe and yields its famous melt-in-your-mouth richness.
  • Storage: Raw liver is delicate and highly perishable. Keep it deeply chilled on ice or in the coldest part of your refrigerator, and prep or cook it within 24 hours of purchase.
