Prized by sushi chefs and seafood aficionados alike, Hamachi Kama is the rich, succulent collar cut from just behind the gills of the Japanese Yellowtail (Seriola quinqueradiata). Because this section houses the working pectoral muscles, it yields an exceptionally juicy, flakey meat with a high natural oil content that keeps it supremely tender under intense heat.

  • Flavor & Texture: Rich, buttery, and deeply savory with crisp, golden skin when seared or broiled.
  • Flash-Frozen at Sea: Individually quick-frozen (IQF) immediately after harvest to lock in peak freshness, texture, and flavor.
  • Effortless Preparation: Simply thaw, season generously with sea salt, and grill, broil, or air-fry until the skin blisters and the meat is tender and flaky. Serve hot with a squeeze of fresh lemon, grated daikon, or a side of ponzu dipping sauce.
  • Specifications: Boneless-center bone-in collar cuts; frozen; individually vacuum-sealed.
  • Wild or Farmed: Farm Raised
  • Availability: Year Round
  • Package Size: 1.5 Lb to 2 lb
  • Form: Frozen, collars
  • Brand: Crown Toro Hamachi
  • Harvest Area: Japan
  • Scientific Name: Seriola quinqueradiata

Because hamachi collar is naturally high in fat, high-heat methods work best to crisp the skin while leaving the inside succulent and tender.

  1. Classic Salt-Grilled Hamachi Kama (Shioyaki): The traditional izakaya method relies simply on heat and salt to let the rich fish shine.
  2. Sweet Miso-Glazed Hamachi Kama (Saikyo Yaki): A rich, umami-forward glaze that caramelizes under the broiler.
  3. Garlic-Herb & Butter Air-Fryer Collar: An easy modern twist that yields extra-crispy skin with minimal cleanup.

Frozen items are shipped with dry ice to ensure the arrive fully frozen. Please place them directly into your freezer upon arrival.

If you order fresh and frozen items together, we package your shipment using gel ice packs instead of dry ice to protect your fresh goods. As a result, frozen items may partially thaw during transit. You can safely place them straight back into your freezer, or allow them to finish defrosting and enjoy right away.

Defrosting Guidelines

  1. Overnight in the Fridge: Small packs take 6–12 hours; large packs take 12–48 hours.
  2. Cold Water Bowl: Submerge sealed items in cold water for a faster thaw.
  • Note: Do not use hot water or attempt to thaw by cooking, as this ruins the natural texture and flavor.
