The Sashimi Vs. The Cooking grade are NOT due to it’s freshness or quality! Not all Toro has enough fat to have that tender “buttery mouthwatering” melting bite when eaten raw. During the beginning of the Atlantic Bluefin Tuna Season (June), the whole tunas are “lean.” The bluefin tunas do have a belly cut to them, but the belly cut does not have a lot of fat within. Well, what can you do with the Toro when it does not have a lot of fat? You can COOK IT!
Toro is the term for the fatty part of the tuna, found in the belly portion of the fish and has a higher fat content then the red meat. Toro presents pink to white in color with a rich, buttery taste that melts in your mouth. Because of its high fat content and distinctive flavor, toro is typically enjoyed raw, but is also incredibly tender when grilled. Cooking or pan searing Toro is the equivalent of Japanese Wagyu Beef - but from the sea! The tenderness of the cooked Toro will melt in your mouth every bite. East coast Bluefin toro is specifically sought after by the top sushi chefs world wide - even during its off season.
