Chopped Surf Clams are made from the North Atlantic Surf clam. After the whole surf clams are hand-shucked, we separate all muscles of the clam: the Siphon, Mantle, Abductor, Foot (tongue), and Bellies. All parts of the clam are thoroughly cleaned, removing all sand and grit. The siphon, mantle, and abductor are used to make Chopped Clams, the foot (tongue) is sliced to make Clam Strips.
